SWEET & SOUR KRAUT


4 strips of bacon, diced
1 medium onion, chopped
1 can (27 oz) sauerkraut, rinsed & drained
1 can (14-1/2 oz) diced tomatoes, drained
1 cup packed brown sugar





In a large skillet, cook bacon
over medium heat until crisp.
Remove with slotted spoon to paper towels to drain
reserving 1 tablespoon of drippings.
Saute onion in drippings until tender.
Stir in sauerkraut, tomatoes, brown sugar and bacon.
Bring to a boil. Transfer to a greased
1-1/2 qt. baking dish. Bake uncovered
at 350 degrees for 30 to 35 minutes or until bubbly.
