1/2 lb. margarine (2 cubes) unsalted, preferred.
l small carton sour cream
2 C flour
Mix well. Shape into 3 balls and chill.
Work with one at a time.
Roll onto floured board, in long narrow shape.
Spread with a tart jam, apricot is best, chopped walnuts,
and raisins down the center.
Roll into a roll, and put on a cookie sheet.
Bake 350 about 40 minutes.
If desired, spread with a little milk for browning
about 10 minutes before done.
After rolls cool, cut slantwise and shake
powdered sugar over each piece.
APPLE BETTY
5 apples, pared and sliced
1/4 C. Orange juice
Mound apples in baking dish, and pour orange juice over them.
Combine topping:
l C. sugar
3/ C. flour
1/2 tsp cinnamon
1/4 tsp nutmeg
dash salt, 1/2 C. margarine
Cut in margarine until crumbly. Scatter over apples.
Bake 375 40 to45 minutes.
Good served with vanilla ice cream. Enjoy!
RUM TORTE
( an old recipe given to me by an Aunt)
Stale cake torn into small pieces...Angel food is best
2 egg whites, beaten stiff
1 pint of whipping cream, whipped stiff
6 ounces chocolate bits, melted
1/4 C rum
Mix beaten whites, melted chocolate, and whipped cream.
Add rum. Carefully mix with cake pieces.
Use as much as you need to make it
The right consistency. Not too firm, or not too soft.
Put into a bowl to use as a mold. Refrigerate.
When set, turn upside down onto a plate.
Coat with shaved chocolate and walnuts.
DATE-NUT PINWHEEL COOKIES
1/2 C. margarine
1/2 C brown sugar
1/2 C. White sugar
1 egg
2 C. flour
1/2 tsp. baking soda
Roll into 10 x 16 rectangle Spread with date filling.
1/2 lb. pitted dates (finely cut)
1/3 C. water
1/4 C. nuts, finely chopped.
Combine and cook 5 min. over low heat.
Stir frequently. Cool. spread over dough.
Roll up like jelly roll starting with wide side.
Wrap in plastic wrap. Chill.
Slice and bake 350 10 to 12 min.
FUDGE-LIKE BROWNIES
2 sq. chocolate
1/4 C. Margarine
l C sugar
l egg
1/2 C Flour
1/2 C, nuts
Melt chocolate and margarine. Add rest of the
ingredients. Pour into greased pan.
Then, 350... 20 minutes.
They will look half baked.
Mark into squares while hot.
Cut after they cool. They will harden.
CARROT RAISIN COOKIES
2 C, flour
speck salt
2 tsp. baking powder
3/4 C margarine
1/2 C sugar
1 egg
l tsp vanilla
2 C grated raw carrots
1/2 C. chopped walnuts and/or raisins.
Mix and drop from tsp. Bake 350 15 to 20 minutes.
EASY CANDIED APPLES
Peel and slice 2 apples. Put into small casserole.
Add 1 Tbsp. red hot candies.
Cover with plastic wrap.
Put into microwave for about 4 minutes.
Test it out...
and add more red hots if you want next time.
A great quick dessert served alone,
or with Creme Whip or Ice Cream.
NEVER FAIL CAKE (easy!)
Boil and cool:
2 sq.baking chocolate
3 T. water
1 1/4 C, sugar
1/2 margarine
Add:
1 tsp vanilla
1 C sour milk (or buttermilk)
Sift into it: l tsp.soda, 1/2 tsp.salt
Add: 1 egg, beaten. Mix in bowl.
Makes 2 layers. 350 about 35 to 40 minutes.
LEMON MILK SHERBET
1 1/4 C. granulated sugar
1/3 C. lemon juice
grated lemon rind
1 pint milk
Combine sugar, lemon juice and rind.
Add milk and stir until sugar is dissolved.
Pour into freezing tray and freeze until firm.
Remove to mixing bowl and beat till light and creamy.
Return quickly to freezer tray and allow to finish freezing.
Delicious!
