Raoul's Cheesy Slaw 
 
1/2 chopped cabbage      equal parts of mayo and Velvetta 
1/4 cup bacon bits or more   1/4 cup raisins 
1/4 cup chopped carrot, onion, cucumber, parsley or whatever! 

Mix the mayo and the velvetta and stir in the veggies and fruit.  
Mix the whole thing with the hand chopped cabbage and chill and serve.

LeFantome's Beef Strognoff 2 lb. lean beef cubes 1/2 lb butter 1 diced onion 1 green pepper, diced 1 cup diced mushrooms 3 TB red wine vinegar dash Tabasco (BIG DASH for me!) 1 TB Worchester 1-2 chopped garlic cloves 1 TB garlic salt 1 cup whipping cream 1 cup sour cream Rice boiled 1:1 with beef consommé 2 TB flour Sauté beef in butter till brown. Add worchester, onions, bell peppers, mushrooms, garlic and saute till soft. Add the remainer of the seasonings. Cook on low until meat is tender. (Crock pot about 3 hours) When all is softened add the creams and wine vinegar and cook another 20 minutes. Cook rice with half beef consomme and H2O until done. Serve the strognoff over the rice. 4 Hearty servings or more.
Angélique's Swedish Meatballs 2 eggs, slightly beaten 1 cup milk 1/2 cup dry bread crumbs 3 TB butter 1/2 cup chopped onion 1 tsp dill weed 1 lb chuck & 1/4 lb ground pork 3/4 tsp dill weed 1/4 tsp allspice 1/8 tsp nutmeg & carmedon 3 TB flour 1/8 tsp pepper can beef broth 1/2 cup half and half Note; can use evaporated milk for the half and half. Combine eggs, milk, bread crumbs. Add sauteed onion cooked in the butter. Add the meats, salt and 1 tsp dill weed along with the rest of the seasonings. Whip with ole tyme beater if ya got one. Chill 1 hour. Shape into little meatballs and brown. Remove meatballs to a 2 qt cassarole after ya pour off the drippings partically but add to the leftover drippings 2 TB flour, salt and pepper and add the beef broth. Add cream and 3/4 tsp dill weed. Cook till thickened slightly. Pour over the meatballs and bake at 375 F for 30 minutes. Serve and love it! Ya might ought to double this one the next time!!
Christmas Traditional Dressing/Stuffing Pan of Jiffy cornbread made up 4 cups dry bread crumbs 2 cup chopped celery 1 cup chopped parsley 1 cup oatmeal medium can pimentos, chopped medium onion chopped 1 tsp pepper salt to taste 1/2 or more tsp sage 1-2 beaten eggs 1 cup chicken broth about 1 cup milk to consistency Mix all ingredients and bake in turkey or in dish covered for 30 minutes at 350F. Serves 8-10 phanphans.
Hoppin' John (New Year's Treat) 1 lb dry black-eyed peas 3 pts cold water 1/2 lb sliced bacon 1 tsp or more Tabasco 1/2 tsp salt 2 TB bacon fat 2 onions, chopped 1/1/2 c boiling water 1 c uncooked long grain rice Cover black-eyes with cold water. Soak overnight. Drain. Add sauteed bacon cut up to peas along with Tabasco® and salt. Meanwhile back at the cave, cook onions in bacon fat until yellow. Add to peas along with rice and boiling water. Cook unti rice is tender and liquid is absorbed (about 20-25 minutes) stirring occasionally! Brings good luck if eaten right after Midnight on New Years Day!
Old South Sweet Pototo Pone 6 med. sweet potatoes, cooked and diced 2 cups sugar 1/4 cup real butter 3 beaten eggs 1 tsp nutmeg 1 tsp allspice 1 tsp cinnamon 1 tsp cloves 2 cups milk or egg nog 12 oz box white or regular raisens Melt butter and mix into sugar . Add the spices and eggs. Put in milk raisens and layer the taters in a square dish and pour the sauce over it. Bake in a 350° oven for 30-45 minutes till set. May use canned yams if you want to whup it up in a hurry....
Recipe taken from Playboy~ made many times! 9" unbaked pie shell 2- 17 oz canned yams or 2 fresh cooked yam 1 cup sugar 1 tsp cinnamon 1/4 tsp salt 1/4 tsp ginger 1/2 tsp allspice 1/4 tsp cloves 1/8 tsp nutmeg 3 beaten eggs 1 cup half and half 1 tsp vanilla jigger bourbon or brandy Bake pie crust 10-15 minutes in 400F oven till half baked. Drain yams and mash. Combine w rest of ingredients. Mix well. Pour into pie shell. Bake 25 minutes at 400F. Chill and serve with whipped cream.
Spanish Rice for any Occasion 8 slices bacon, cooked 1 cup chopped onion 1 chopped green pepper 1 lb can tomatoes 1 cup water 1/2 cup chili sauce 1 cup uncooked long grain rice 1 tsp salt 1 tsp brown sugar 1/2 tsp Worchester dash pepper Fry up the bacon. Crumble. Cook onion and greeen pepper in part of the bacon fat. Add can of tomatoes and the rest of the ingredients and cook covered for 35-40 minutes or until the rice is tender. Put the bacon over the top! Enjoy. I have looked a long time for a good spanish rice recipe and this a a good one!
Creamed Spinach Deluxe--Old South TeaRoom, Vicksburg 1 lb frozen Spinach 3-4 strips bacon 1 clove garlic, minced 1 medium onion 3/4 seasoned salt dash of pepper 2 tb butter 2 tsp flour 1 cup milk Boil spinach. Wash in cold water; squeese dry. Chop.Grind bacon san saute along with onion along with garlic. Season with salt and pepper. Melt butter in skillet add flour and blend. When smooth add milk then the spinach mixture and bring to slow boil.
Old South Tea Room Ham Dressing 1 cup ground ham fat 1 lb toasted crackers, ground small loaf toated bread ground 2 TB sugar 1 tsp mustard seed 1 tsp dry mustard 1 stalk celery ground 2 med onions ground 1/2 cup pickle relish 1 tb chopped parley 4 beaten eggs 1 cup sherry wine 4 dashes Tabasco Vinegar to make paste like consistency, not too soft Combine ingredients and stuff the ham.
Potatoes with Lemon Herbs 1/4 cup olive oil 3 TB butter or oleo 3 large potatoes or more diced salt/pepper 3 TB grated lemon 2 TB parsley 1 TB garlic, chopped basil to taste about tsp Fry diced potatoes in olive oil and butter till browned. Put into dish and add the remainer of the ingredients and toss. That IT! Simply huh????
Deviled EGGS 12-18 hard boiled eggs peeled and cut in half 2 TB bacon bits 3 TB sweet pickle relish 1 tsp Worchester 2 TB parley flakes 1 tsp garlic salt 1/2 tsp pepper 2 TB minced onion, soaked in a bit of water,optinal 1/2 cup thousand island or mayonaise paprika Pop out the little yokes and screunch them up and mush them! Add the seasonings and the veggies and bacon bit EXCEPT the paprika and stuff the filling into the holes created when ya popped out the yokes! Sprinkle the whole thing with paprika. Make 2 time the number of eggs you cooked!
Texas Hushpuppies 2 cups cornmeal 1 cup flour 1/4 cup sugar 1/4 tsp soda 2 tsp salt 1 tsp pepper 3 tsp baking powder 1 tsp Accént 1 onion, chopped 1 tsp poultry seasoning 1/4 parsley flakes 2 eggs 1 cup buttermilk 1 TB butter melted Combine all ingredients. Chill for 1 hour Drop in 1 inch balls into 350 pot of boiling shortening and fry till golden brown. The mix keeps several days in the fridge.

Mexican Microwave Pralines! 1 cup brown sugar 1 cup white sugar 1 TB butter 1 TB corn syrup (white) 5 TB water 1/2 lb pecans 1/2 tsp cinnamon Combine sugars, corn syrup, butter, cinnamon and water. put into a Pyrex bowl and cook 7 minutes on medium, stirring twice. {Note: on a stove cook till soft ball or 238F} Remove from oven or heat and beat till mixture holds it's shape when dropped from a spoon onto waxed paper. You can add the nuts before or after dropping. YUM!
White Fudge 2 cups sugar 2/3 cream, milk or water 1 tsp vanilla 2 TB light corn syrup 2 TB butter dash salt Cook sugar, liquids, syrup to 240F or soft ball. Add extract and cool. Beat until creamy and mixture loses the shine. Pour into buttered square pan. YUM YUM
Chocolate Covered Cherries or Whatever! 2 or more lbs powered sugar 1 can Eagle Brand® milk 1 1/2 cups coconut 2 1/2 lbs fine pecans 2 TB vanilla 1/2 oleo (room temp) 3 jars (10 oz) cherries or whatever fruit ya want 1 large and 1 small package of chocolate chips 1 cake parrifin wax Knead by HAND powered sugar, milk, coconut, finely chopped pecans vanilla, margarine until it forms a big ball. Pinch off a bit to form a 1 1/2 inch circle and squsch with your hand to form it. Wrap it around the cherry or the strawberry or whatever. Now powder your hands with the powdered sugar. Wrap all the cherries until the dough is used up. Chill overnight. Next day, in a double boiler melt the chocolate and parrafin. Using a toothpick to dip insert into the balls and dip into the chocolate.Set on wax papered cookie sheets to chill. May need to double dip some of them. Makes a bunch! It's a pain to make but ty are oh soooooo good! YUM YUM YUM!

Old South Tea Room Cheesecake 2 1/2 lbs cream cheese, softened 1 3/4 cups sugar 3 TB flour 1 1/2 tsp each orange and lemon rind grated 1/2 tsp vanilla 5 eggs 2 extra egg yokes 1/4 heavy cream graham cracker crust Mix and cook in a graham or other cookie shell in a hot oven at 500F for 12-15 minutes. Turn down the heat to 200F for 1 hour. Cool before cutting and adding whatever topping you desire if you desire a topping. YUM YUM YUM YUM!

LeFantome's MAGIC Fruitcake Note: for Xmas make this by NOVEMBER 15! 2 lbs graham crackers, crushed fine 1 cup brown sugar 2 cans Eagle Brand® milk 1 tsp cinnamon 1 tsp cocoa 1 tsp nutmeg and allspice 1 pkg. each candied fruit types cherries pinapple etc. 2 wine glasses of sweet port 1 wine glass Myer's Rum 1 wine glass of good bourbon or brandy 1-2 cups nuts, pecans, walnut etc. MIX WITH YA HANDS! That's right, your hands! I know it's sticky but put it all in a big container and get with it! When it is smooth after all that squeshing through those little pinkies then put it into whatever containers you have around lined with WAX PAPER! Cover all sides with wax paper. Including the top! Store at least 1 count me (ONE) month laying around the house. Not the fridge, the air! Remove the wax paper and serve! DO NOT COOk! LeFantome will come get you if you do! Yeah and don't burn off the booze either! It will evaporate the alcohol...a little.
Dee's Red Hot Xmas Jello 10 oz pkg. Red Hots candy 2 boxes Cherry Jello 3 cups hot water 2 cups applesauce Melt redhots in hot water, add Jello and when disolved add applesauce. Pour 1/2 or mixture in large baking dish and chill till stiff. THEN mix: 3 oz cream cheese 1/2 cup chopped nuts 1/2 cup chopped celery 1/2 mayonaise spred this over the cooled Jello! Then add the remaining jello and chill... ..YUM....
Dee's Strawberry Pretzel Salad 2 cups pretzels, crushed 3/4 oleo, melted 3 TB sugar 1- 8 oz pkg cream cheese 3/4 c Sugar 1 - 8 oz pkg Cool Whip 2 -10 pkg frozen strawberries 2 cups hot water 1- 13 oz can crushed pineapple 1- 6 oz pkg strawberry Jello Let frozen strawberries set in fridge for an hour before opening. Mix melted oleo and crushed pretzels and 3 Tb sugar. Press all but 1/3 cups in a 9x13 pan. Bake at 400 F for 5 minutes. Beat cream cheese, 3/4 of sugar and fold in cool whip. Spread this on the cooled crust. Dissolve the jello in the hot water and add still frozen strawberries and stir till thawed. Add crushed pineapple to Jello mixture and pour over the cream cheese in pan. Sprinkle the reserved pretzel topping over all and refrigerate until set.
Chocolate Chip Cookies 5 stiks of butter pinch of salt 2 1/2 cups brown sugar 6 cups flour or bread flour 2 eggs 20 oz choc chips (Gillarldi) dash vanilla 1/2 TB baking soda With HANDS combine butter salt, brown sugar, flour. Then add the eggs, vanilla, and soda and chips. You can add some nuts if you want em...tooo.Chill. Roll into 1 inch balls and cook in 325°F oven for 14 minutes..... and eat before I get to them.....
ECLAIRS~ 1 pkg instant Vanilla pudding 1 1/2 cup milk 1/2 tub prepared Dream whip 6 tb butter 3/4 cup sifted flour 3 TB milk 3 eggs 2 tb butter 2 squares unsweetened chocolate 1/1/2 cup powered sugar dash salt 3/4 cup water Filling--- Make pudding with 11/2 cups milk and chill and fold in dream whip Shells--- Bring 6 tb butter and water to a boil. Rapidly stir in flour and Cook 2 minutes till it leaves the sides of the pan stirring rapidly. Turn off the heat and beat eggs in, one at a time. Beat until satinly. Form 5" by 1" strips of dough with a spoon on an ungreased cookie sheet. Bake @ 425 F for 20 minutes and then turn down to 350 for 30 minutes. Cool Cut off top of shell and fill with pudding. Glaze----Melt chocolate with 2 tb butter blend in powered sugar with 3 tb milk. Spread on eclairs.
Highland Park Cafeteria Coconut Icebox Pie 2 cup milk 2 oz cornstarch 1 cup sugar 2 tb butter 3 beaten eggs,separated 1 tsp vanilla 1 tsp coconut extract 1 tsp gelatin cold water pinch salt 6 tb sugar 1 cup shreaded coconut whipping cream 9" baked pie shell In a double boiler scald milk. Combine cornstarch with sugar and add to milk. Cook and when thickened add butter. Add egg yolk and lower heat and cook till very thick. Remove and add vanilla and coconut extracts. In a separate bowl combine gelatin with cold water to dissolve and pour into custard. Whip the egg whites with sugar and salt and fold into custard. Pour pie into shell and cool. Sugar cookies Cream together: 1 cup powdered sugar 1 cup sugar 1 cup oil 1 cup butter 2 eggs Add: 4 1/2 flour 1 tsp creme tarter 1 tsp salt, baking soda and vanilla Put in dollups on cookie sheet and with a flat glass dipped in sugar press down. Makes a bunch at least 5 dozen...when cool.... IF Desired: ice with a mixture of powdered sugar, water 2 tb butter melted and some food coloring until the consistency of frosting. Black Bottom Pecan Pie w/Whisky Sauce 1 oz bittersweet chocolate 5 tsp cream 1 tsp sugar 9" deep dish pie shell, cooked Melt chocolate in microwave with cream and sugar until dissolved. Spread over the cooked pie shell and freeze. 9 TB butter 1 cup + 2 TB brown sugar 1 cup light Karo 2 tsp vanilla 5 tsp bourbon 5 eggs 1 cup pecan halves Melt butter, set aside. In bowl mix brown sugar, syrup, vanilla and bourbon until smooth. Add Eggs, one at a time beating well. Beat in butter till smooth. Arrange pecans in the pie shell and pour in filling. Bake at 350 for 45 minutes until set. Whisky Sauce 4 TB unsalted butter 1/3 cup sugar 1 egg 1/2 tsp very hot water 1/4 cup whipping cream 1/4 cup bourbon Melt butter, Mix egg and sugar and mix into melted butter. Add hot water and simmer this mixture coats a spoon. About 7 minutes. Cool Stir in cream and whisky. Serve with pie. Pappadeaux's Sweet Potato Pecan Pie with Bourbon Sauce Sweet Potato Filling 1/4 cup brown sugar 1- 1 1/4 cup cooked mashed sweet potatoes 1 egg 1/4 tsp vanilla 3/4 tsp cinnamon 3/4 tsp nutmed 1/4 cup brown and white sugar pinch salt 1/4 cup whipping cream 3/4 tsp allspice Combine mashed potatoes, sugars, eggs cream, vanilla, salt, cinnamon, allspice, nutmeg and butter in bowl and beat at medium speed till smooth. Pecan Pie Filling 1 1/4 cup sugar 3 eggs 1/4 tsp vanilla pinch salt 3/4 tsp cinnamon 1 1/4 cups dark karo syrup 3 tb butter 1 1/4 cup chopped pecans Combine sugar, syrup, eggs, butter, vanilla, salt and cinnamon with mixer and beat on low speed until mixture is opaque.(about 4-5 minutes) Stir in pecan and mix well. To Assemble Pie Spoon sweet potato mixure evenly in pie shell. Fill shell evenly to the top with pecan syrup. Bake at 325 for 1 1/2 hours or until a knife comes clean. Store 24 hours. Bourbon Sauce 1 1/2 cup whipping cream 1 cup milk 1 small instant vanilla pudding 3 TB bourbon, brandy or rum 1 tsp vanilla Combine cream and milk in bowl. Slowly whip in pudding mix and add booze and vanilla and whip until well blended to a sauce consistency. Sauce should be made about a hour before use as it will thicken when it sits. MICROWAVE RASPBERRY dIVINITY 2 egg whites 3 cups sugar 1 3 oz pkg raspberry jello 3/4 c light Karo 3/4 cup hot water 1 cup chopped pecans Beat egg whites till very stiff. Slowly add gelatin and beat till it disolves. In large bowl mix sugar, corn syrup and water. Cool covered with plastic wrap or until 325 degrees. Slowly pour syrup into egg white stirring constantly. Beat till candy look dull and stir in nuts. Drop by spoonfuls unto greased cookie sheet. When cooled store with sheets of waxpaper in air tight container. Can be frozen. FLUFFY GINGERBREAD 2 cups flour 1 1/2 tsp soda 1/2 tsp salt 2 tsp ginger 1 tsp Cinnamon 1/2 tsp cloves 1/2 butter or shortening 1/2 cup brown sugar 2 well beaten eggs 3/4 cup dark Karo 1 cup boiling water Sift dry ingredients. Creme butter or shortening with brown sugar. Add eggs then alternately karo and flour. Add hot water Pour into greased pan and bake at 350 for 45 minutes or until done. BAKING SODA ORNAMENTS You do NOT eat these! 2 cups baking soda 1 cup cornstarch 1 1/4 cups cold water Mix the cornstarch and baking soda in a saucepan and add the water. Cook over medium heat, stirring constantly until the mixture is the consistency of wet mashed potatoes. Turn out on a plate and cover with a damp cloth and let cool. When cool, knead until smooth. Seal in a plastic bag and store in the fridge until ready to use. Shape ornaments by hand or use cookies cutters to cut into shapes. Insert a wire hanger into the soft dough, then let them dry overnight or heat in 250 degree oven for 15 minutes. Discs can be painted or use markers to decorate. Finish with clear nail polish. SOUTHERN KITCHEN CINNAMON ROLLS 1/2 Cup milk 1 1/2 TB dry yeast 1/2 Cup butter 3 TB warm water 1/3 Cup sugar 2 1/4 cups flour 1/2 tsp salt 1 egg Scald milk and add butter and stir until the butter is melted. Add sugar and salt and stir until dissolved. Dissolve yeast in warm water and add to milk mixture. Add 1 cup of flour and beat well. Add egg, which has been beaten lightly then beat about 2 minutes. Add 1 cup of flour and beat well. Add rest of flour and mix well.Place on floured board and knead very lightly about 8 times. Pat in well greased bowl cover and let rise till doubled in bulk. Cinnamon sugar mixture 1 cup sugar 1/2 cup well packed brown sugar 1 TB cinnamon 6 TB butter Mix sugar, brown sugar and cinnamon together until well blended. Roll dough cut to 8" x 20". Completely cover with 1 TB melted butter. Spread connamon sugar mixture evenly over the surface reserving about 3/4 cup for top. Roll up and cut into 24 even pieces. Melt 3 TB butter in 7x10 1/2 in pan and putt rolls in pan placing cut side up. Press dough to force butter up around rolls. Then spread remaining sugar over the top. Press down. Let rise until double. Bake at 375 degrees until done about 20 minutes. Serve warm. These were served at the conclusion of each meal at Southern Kitchen in Dallas. Kristina's Wedding Cake My first daughter's wedding cake. First cake ever done by me. This cake is 2 layers each of 14, 10, 8 and 6 inches. Cake mix 8 boxes Pillsbury White Cake Mix (for each mix) 1 cup + 2 tb water 2 tb oil 2 whole eggs 1 tsp Creme Bouquet extract 14" = 2 full mixes 10" = 1 mix 8" = 1/2 mix or 2 1/2 cups 6" = 1 3/4 cup mix Icing: 1-2 tsp Nordic cream extract 1/2 cup hot water 2 lb powered sugar 1 cup shortening Makes 2 cups frosting Bamb Strawberry Jam or other filling of your choice. Mix cake till moistened then 2 minutes at medium. Bake at 350F. 14"= 45-50 minutes 10"- 30-40 minutes 8"= 25-30 minutes 6: 30 minutes Mix iceing in processor; can dilute to thinness with water or milk. Split the layers and fill with jam and assemble, Party sprinkles also may be added to cake mix if desired.
