New York-Style Cheesecake


1 cup graham cracker crumbs
3 tablespoons butter, melted
2 tablespoons sugar
2 (8-ounce) packages cream cheese, softened
1 (3-ounce) package cream cheese, softened
1/2 cup sugar
1 tablespoons all-purpose flour
1 1/2 teaspoons vanilla extract
1 large egg
1/2 cup sour cream


Stir together first 3 ingredients. Press crumb mixture onto bottom and 1 1/2 inches up sides of a lightly greased 7-inch springform pan. Bake crust at 350 degrees for 8 minutes. Cool on a wire rack.

Beat cream cheese at medium speed with an electric mixer until smooth. Gradually add 1/2 cup sugar, flour, and vanilla, beating until blended. Add egg, beating until blended. Add sour cream and beat just until blended. Pour mixture into prepared crust.

Bake at 350 degrees for 50 minutes or until center is almost set. Remove cheesecake from oven, cool on a wire rack. Cover and chill 8 hours. Gently run a knife around edge of cheesecake to release sides of pan; garnish if desired with canned cherry pie filling or chopped fresh strawberries and whipped cream.
