LIME PARTY CAKE WITH ICING
-1 package white cake mix
- 1 3 oz. package lime gelatin
- 4 eggs
- 1 cup water
- 1/2 cup shortening
- 1 tsp. vanilla
Place all ingredients in a mixing bowl & beat with mixer for 3 minutes or until well blended. Pour into a floured & greased 9X13 inch baking pan. Bake at 350 degrees for 30 to 35 minutes. Leave in pan.
ICING:
-1 1 lb. box powdered sugar
- juice of 2 lemons
- Grated rind of lemon
Mix all ingredients & pour on warm cake.
OZARK PIE
- 1 egg
- 3/4 cup sugar
- 2 Tbs flour
- 1 1/4 tsp. baking powder
- 1/8 tsp. salt
- 1/2 cup chopped nuts
- 1/2 cup chopped apples
- 1 tsp. vanilla
Beat the egg in a bowl for 1 minute. Add the sugar & beat until smooth. Sift the flour, baking powder & salt together & stir into the egg mixture. Add the nuts,apples & vanilla & mix well. Pour into a buttered 9 inch pie plate. Bake @ 350 degrees for 35 minutes.
KENTUCKY CHILI
Ingredients:
2 cans chili hot beans
1 can of baked beans
2 lbs ground chuck
1 can tomato sauce
1 or 2 cups of tomato juice
2 heaping tsp. of chili powder
1/2 of large onion
1 tsp. salt
1 heaping tsp. sugar
1/2 to 1 whole tsp. of red pepper
Preparation:
Brown meat with diced onion, salt.
In large crockpot mix the beans, tomato sauce, tomato juice. Add sugar, pepper, and chili powder. Mix meat and beans together.
Let it simmer awhile (the longer the better), and add more or less pepper to taste. For thickness add more or less juice to taste. Also use a little milk to thicken if you like.
CHEESE POPOVERS
1 cup (250 ml) milk
1 cup (250 ml) all-purpose flour
1 Tbs (15 ml) melted butter
1/4 tsp (2 ml) salt
2 eggs
1/2 cup (125 ml) grated cheddar or Gruyere cheese
Cayenne pepper to taste (optional)
Have all ingredients at room temperature. Combine the milk, flour, butter, and salt in a bowl and beat just until smooth. Add the eggs one at a time, beating as little as possible to incorporate. The batter should be thin, about the consistency of heavy cream. Pour into generously greased muffin or popover tins, filling the cups no more than three-quarters full. Sprinkle with grated cheese and optional cayenne. Bake in a preheated 450F (220C) oven for 15 minutes. Reduce the heat to 350F (180C) (do not open the oven door) and bake an additional 20 minutes. To test for doneness, remove a popover and check to see that the sides are firm and golden brown. Makes about 8 popovers.
SCALLOPED CORN
4 Cups fresh or frozen corn
1 Cup Milk
3 Tbs Butter or Margarine melted
1 Tbs finely chopped onions
3 eggs beaten
1 Cup crushed saltines (about 30 crackers)
1 Tbs sugar
Salt & Pepper to taste
In a large bowl, combine the corn, eggs, milk, 3/4 cup of cracker crumbs, butter, sugar and onion. Transfer to a greased 1-1/2 qt baking dish. Sprinkle with remaining cracker crumbs. Bake uncovered at 325 degrees for 1 hour or until a knife inserted near the center comes out clean.
CAROL'S HAMBURGER NOODLE BAKE
2-2.5 lbs lean ground beef
1-2 garlic cloves, chopped fine
1/2 tsp. salt
dash pepper
1 tsp. sugar
3-4 8 oz cans tomato sauce - (or 2 - 15 oz cans)
8 oz. wide noodles
1/2 cup chopped onion
1/2 green pepper chopped (more if desired)
1 - 3 oz. pkg. cream cheese
1/4 cup sour cream
1 cup cottage cheese
1/2 cup cheddar cheese, shredded or sliced
Brown meat and drain fat. Mix in garlic, salt, pepper, sugar, and tomato sauce. Cover and cook slowly for 20 minutes. Cook noodles per pkg. directions and drain. While noodles are cooking, chop onion and mix with green pepper, cream cheese, sour cream and cottage cheese. Place 1/3 of noodles in bottom of greased casserole ( 9 x13), spread with 1/3 of onion mixture, cover with 1/3 of meat sauce. Repeat layers twice more. Top with shredded cheese. Bake approx. 30 minutes in 350 degree oven until nicely browned and bubbly. Serves 6-8 depending on appetite.
CHICKEN-CHIP BAKE
2 Cups cubed cooked chicken breast
2 Cups sliced celery
1 Can sliced water chestnuts, rinsed under hot water, and drained
3/4 Cup thick, good quality mayonnaise
1/2 Cup slivered almonds
2 Tbs grated onion
2-3 Tbs fresh lemon juice, or more to taste, more is better
1/2 Tsp MSG (optional)
1/2 Tsp salt
1/2 Cup shredded cheddar or American cheese
1 Cup potato chips, lightly crushed
Salt and freshly ground black pepper to taste
Combine all ingredients except cheese and chips. Taste, and add more salt, pepper, and lemon juice as desired. Pile lightly in 1 1/2 quart casserole. Sprinkle with cheese, then chips. Bake at 400F for 20 minutes or until heated through, watching to ensure that chips do not burn. Serves 2 generously with some leftover for lunch.
CRISPY BUTTERSCOTCH COOKIES
Ingredients:
1/2 cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 cups crisp rice cereal
1 cup butterscotch chips
Directions:
In large bowl, cream butter or margarine and sugar until light and fluffy. Add egg and vanilla; beat until well blended. Add flour, salt, and baking soda, mixing well. Stir in cereal and butterscotch chips. Drop by heaping tablespoon onto greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 12-15 minutes, until lightly browned. Remove cookies to cool on racks.
ANOTHER SUGAR-FREE CAKE
2 cups raisins
3 cups water
2 eggs
3 tablespoons liquid sweetener
3/4 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 cups all-purpose flour
1 cup chopped walnuts
1 cup unsweetened applesauce
Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt or tube pan. In a saucepan combine raisins with water and cook until the water is absorbed, cool. Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener. Mix well. Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture. Stir until just combined. Mix in raisins and chopped nuts. Pour batter into prepared pan. Bake at 350 degrees F (175 degrees C) for one hour.
ANOTHER BANANA SPLIT CAKE
2 c graham cracker crumbs
1 stick margarine, melted
4 tbsp sugar
2 pkg {8 oz) cream cheese
1 box sifted powdered sugar
1 tsp vanilla
4 or 5 ripe bananas, sliced
1 lrg can pineapple, drained
1 lrg carton Cool Whip topping
1 c pecans, finely chopped
1 small jar maraschino cherries, drained and cut in half
Mix graham cracker crumbs, melted margarine and sugar in mixing bowl; spread in 13x9x2 inch pan, pressing slightly up the sides of the dish.
Chill 45 minutes. Combine softened cream cheese and the powdered sugar, adding vanilla with mixture and mix until smooth. Spread over the crust.
Arrange the sliced bananas over the cream cheese mixture; spoon the drained pineapple over the bananas. Spread the Cool Whip over the top. Sprinkle with the chopped nuts and cherries. Chill for 2 - 3 hours before
serving.
STRAWBERRY-BANANA SPLIT CAKE
2 cups graham cracker crumbs (about 32 squares)
1/2 cup butter or margarine, melted
1/4 cup sugar
FILLING:
1/2 cup butter or margarine, softened
2 cups confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract
3 large firm bananas, cut into 1/4-inch slices
2 (8 ounce) cans crushed pineapple, drained
2 quarts fresh strawberries, sliced
TOPPING:
2 cups whipping cream
1/4 cup confectioners' sugar
1 1/2 cups chopped walnuts
Directions:
1. Combine the crumbs, butter and sugar; press into an ungreased 13-in. x 9-in. x 2-in, dish. Chill for 1 hour.
2. In a mixing bowl, cream butter, confectioners' sugar, milk and vanilla. Spread over crust; chill for 30 minutes. Layer with bananas, pineapple and strawberries.
3. In a small mixing bowl, beat cream until soft peaks form. Add confectioners' sugar; beat until stiff peaks form. Spread over fruit. Sprinkle with nuts. Chill until serving.
BURGOO
Put in a heavy lidded kettle:
3 qts. water or stock
3/4 lb. lean inch-diced stewing beef
3/4 lb inch-diced pork shoulder
Bring slowly to a boil. Reduce heat at once..and slowly simmer about 2 1/2 hours.
In another heavy kettle put:
1.A disjointed 3 1/2 lb. chicken with just enough water to cover.
2.Bring these ingredients to a boil.
3.Reduce the heat at once...and simmer about 1 hour or until the meat can easily be removed from the bones.
4.Put the chicken meat and the water in which it was cooked into the first kettle with the other meat after it has simmered the 2 1/2 hours as directed.
At this time also add:
2 1/2 cups quartered ripe, peeled and seeded tomatoes
1 cup fresh lima beans
1/2 red diced pepper
4 diced green peppers
3/4 cup diced onion
1 cup diced carrots
2 cups diced potatoes
1 bay leaf
1 Tablespoon Worcestershire sauce
Simmer this whole mixture 1/2 hour or more before adding 2 cups corn (freshly cut from cob). Cook about 15 minutes more or until all the vegetables are soft. Correct the seasoning.
KENTUCKY HOT BROWN
8 slices of bacon
4 slices of turkey breast
4 slices of toast
4 slices of tomato
1 tablespoon flour
1 tablespoon butter
1 cup millk
1 1/2 cups grated cheddar cheese
Cook the bacon until crisp.
To make the sauce, in a saucepan, melt butter and add flour to make a paste. Add milk and stir constantly over medium high heat until sauce thickens. Add cheese and stir until well blended.
Place toast in a baking pan placing a slice of turkey on each piece oftoast. Pour cheese sauce over turkey and place a tomato slice in the center of each sandwich. Then put a piece of bacon on either side of the tomato.
Place under the broiler until the cheese starts to bubble and begin to turn slightly brown. Serves 4
OVEN-FRIED SQUASH
Ingredients:
2 lbs. zucchini yellow squash
1 tsp salt
3 tbsp melted margarine
1/4 cup freshly grated parmesan cheese
1/4 cup freshly grated bread crumbs
dried basil leaves
Directions:
Slice the squash thinly as directed above. In a colander, toss the squash with the salt and set to drain for 2 hours. Lightly grease alarge baking sheet, 12 1/2 x 17 1/2 x 1". Layer the squash slices,overlapping. Drizzle with melted margarine. Combine cheese and bread crumbs. Sprinkle cheese crumb mixture over squash. Sprinkle on basil and cook in a preheated 350 degree oven for 25-35 minutes until browned and crisp. Makes 6 servings.
COUNTRY FRIED SQUASH
Ingredients:
6 pounds butternut squash
1 egg, beaten
1/2 cup all-purpose flour
1/2 cup milk
1/2 cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
Directions:
1. Combine egg and milk together in a small bowl, mix well.
2. In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the milk-egg mixture and then dredge the squash in the dry mixture. Fry the squash in a frying pan containing 1/2 inch of oil. Fry until golden brown.
