ZUCCHINI BREAD

3 eggs
2 cups sugar
1 cup vegetable oil
2 cups zucchini squash
(grated with skin on)
3 tsp. vanilla
3 cups flour
1 tsp. soda
1 tsp. salt
2 tsp. cinnamon
1/4 tsp. baking powder
Beat eggs until foamy
Add sugar, oil, vanilla and zucchini
Mix well
Add flour, soda, salt,
baking powder and cinnamon
Bake in 2 (4x8x4) well greased pans
for 50 minutes to 1 hour at 350 degrees
Cool and remove from pans
Ovens vary so watch the times
