PAELLA

3/4 cup olive oil
8 pieces chicken
(boiled, deboned, cut into small pieces)
2-3 chopped tomatoes
1 green pepper, 1 red pepper cut into strips
1 tsp garlic powder
1 large pinch Saffron in 2 Tbsp boiling water
1 1/2 tsp salt
6 cups chicken broth or water
3 cups uncooked rice (not instant!)
1/4 pound ham (small tuna sized can)
1/2 pound shrimp
1/2 pound white fish
Prepare chicken the night before,
save the broth for use in paella.
Heat oil, add tomatoes, cook until soft.
Stir in garlic and peppers, cook 2 minutes.
Stir in rice, saffron, broth.
Add without stirring, chicken, ham (diced),
shrimp and fish (cut into small pieces).
Bring to boil and cook 20 minutes
over medium heat, uncovered,
no stirring until ready to serve.
Leftovers are just as good, if not better
than the first night. Microwaves easily.
I never have enough left to try freezing,
don't know how well it would do.
