ORANGE CRISPIES

2 cups shortening (not butter or oleo)
1 teaspoon salt
2 cups sugar
2 eggs, unbeaten
1 tablespoon orange extract
3 cups all-purpose flour
Sugar



Cream shortening with
salt until light and fluffy,
while gradually adding sugar.

 Add eggs; beat well.

 Blend in orange extract, then flour.

Drop onto ungreased cookie sheets
about 2" apart.

 Bake at 375 degrees for 8-9 minutes
or until edges are lightly browned.

 While cookies are warm,
sprinkle with additional granulated sugar.

 Let stand 1-2 minutes before removing.

Makes 6 dozen.



Note:  I have also made these using lemon extract.
Both versions are good.
Once when I didn't have enough of either flavoring,
I combined the two and they still tasted great.
I just called them Citrus Crispies.
