FUNNEL CAKE

2 eggs
1 cup milk
2 cups of Flour
1/4 cup sugar
dash of salt
1/2 tsp baking powder
Peanut oil ( for frying)
powdered sugar


Beat eggs, add milk and sugar, then mix well.

Combine flour, salt, and baking powder
then add wet ingredients and mix.

Place 1 1/2 inches of oil in a frying pan
and heat until hot ( about 10 minutes)

Using one cup of batter at a time,
pour through funnel into the oil,
making a crisscross pattern.

When both sides are golden brown,
put on a paper plate and sprinkle
with powdered sugar.

Recipe makes about 8 good sized cakes.
